Tapi kalau apakah bisnis ini menjadi sesuatu menjadikan secara bagus faktornya banyak,” jelas Jovita saat ditemui di Gelato Class saat acara SIAL Interfood 2019 di JIEXPO, Jumat 15/11/2019. Anak-anak pasti suka, remaja pasti suka, tinggal kita mau bidik segmen yang mana. Family kah, atau mau masuk ke health segmen, kita main misalnya low sugar,” paparnya. Ia juga menyarankan bagi para calon pengusaha harus menguasai teknik pengolahan gelato dengan benar, memiliki skill yang mumpuni, dan mau terus mencoba resep. “Kalau untuk buka usaha gelato dan buat gelato itu memang harus belajar khusus, belajar khususnya dengan sekolah saja tidak cukup, yang penting lebih banyak di jam terbang sih,” ujarnya. Untuk gelato mesin yang tipe semiprofesional mulai dari angka Rp 80 juta, kalau untuk freezer-nya sendiri tidak bisa dirata-rata karena banyak sekali mereknya,” jelas Jovita. “Tapi ada harga, ada kualitas. Untuk showcase itu kalau yang delapan rasa bisa sekitar Rp 100 juta, kalau yang besar sampai 24 rasa itu sekitar Rp 200 juta,” lanjutnya. Untuk mengakali modal awal yang cukup besar, ia menyarankan untuk berpartner dengan teman atau mencari investor. “Pilihannya cuma dua. Pertama, mulai dengan modal kecil, dan yang kedua, cari investor. Jadi mulai dari yang kecil dulu kalau memang modalnya terbatas. Bisa partnership itu juga bisa, atau cari investor. Kalau ingin hasil yang bagus harus pakai alat yang bagus juga,” paparnya. Laba kotor dalam berjualan gelato juga tidak main-main. Jika dihitung secara terperinci pengusaha gelato, disebutkan oleh Jovita bisa untung Rp 60-an juta per bulan. "Kalau yang skala medium saja kalau sehari bisa terjual 100 mangkuk gelato saja, sebulan bisa dapet keuntungan sampai Rp 60-an juta, itu untuk laba kotornya. Kalau sehari terjual 100 ya.
